Fried Egg Rolls with Quorn Pieces

Ingredients
For the filling:
- Quorn Pieces
- 5-6 eggs
- 3-4 tbsp mayonnaise
- 2 tbsp chopped parsley or dill
- 2 green onions, finely chopped
- Salt and pepper, to taste
For the bread rolls:
- 6-8 slices of white or brioche bread
- Canola or sunflower oil, for deep frying
- Toothpicks
Method
- Prepare the filling by frying or sautéing the Quorn Pieces as per pack instructions. Set aside to cool.
- Hard boil the eggs, peel them, and mash them with a potato masher or fork. Then mix the mashed eggs with mayonnaise, chopped herbs, green onions, and the cooled Quorn Pieces. Season with salt and pepper.
- Prepare the bread by using a rolling pin or wooden board to flatten each slice.
- Shape and Fry the bread rolls by folding the bread pieces into small pockets, securing each with a toothpick.
- Heat the oil in a deep fryer or a deep pan and deep fry the bread pockets until they are golden and crispy. Drain the bread rolls on paper towels to remove the excess oil.
- Once fried, carefully remove the toothpicks from the bread pockets. Use a piping bag or a spoon to fill each bread roll with the Quorn Pieces and egg mixture.
- Serve warm as an appetizer or snack and enjoy!
