Homemade Gluten Free Pizza with Quorn Meat Free Pieces

You won’t wait to bite into this appetising, flavoursome pizza topped with Quorn Pieces tossed in chilli flakes, oregano and garlic, and fried golden brown, and sharing the limelight with capsicums and black olives, garlic and fresh basil. Gluten free and looking gorgeous. What could be more tempting?

Ingredients

  • 150g Quorn Pieces
  • 2 tbsp olive oil
  • 1/2 tsp chilli flakes
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • 1 clove of garlic, crushed
  • 1 red onion, finely sliced
  • 1/2 orange capsicum, finely sliced
  • ½ yellow capsicum, finely sliced
  • 1 tbsp black olives, halved
  • 50g cheese, grated or vegetarian mozzarella, torn
  • Torn basil leaves

Ingredients for the Pizza Base

  • 250g gluten free flour
  • 2 tsp xanthan gum
  • 1 1/2 tsp baking powder
  • 50g butter
  • 75g cheese, grated
  • 2 tbsp chopped fresh chives, optional
  • 200ml milk

Ingredients for Tomato Sauce

  • 4 tbsp tomato puree
  • 60ml vegetable stock
  • 1 clove garlic, crushed
  • Bunch of fresh basil, chopped
  • Salt and pepper to taste

Method

  1. Preheat the oven to 220C/400F
  2. To make the pizza base, sieve the flour, xanthan gum and baking powder into a bowl. Rub in the butter and then stir in the cheese and chopped chives. Add the milk little by little to form a dough. Turn out onto a floured surface and knead for a minute to form a smooth dough. Cover with cling film and set to one side
  3. Combine the chilli flakes, oregano, salt, black pepper and garlic in a bowl and toss the Quorn Pieces in the blend to coat evenly
  4. Preheat 1 tbsp of the olive oil in a frying pan over a medium heat and cook the Quorn Pieces for 4-5 minutes until golden brown. Remove from the heat and set to one side
  5. Heat the remaining oil in a large frying pan, add the onion and peppers
  6. To make the tomato sauce, combine all of the tomato sauce ingredients and mix well
  7. Split dough into two balls. Roll out each ball into 1cm thick rounds. Brush with oil, spread the tomato sauce over the top of the pizza and top with the onions, peppers, Quorn Pieces and olives. Sprinkle with grated cheese or shredded mozzarella and basil leaves and bake in the centre of the oven for 20 minutes until golden brown
