Ingredients
- Pack of Quorn Swedish Style Meatballs
- 2 long loafs of thick crusty bread
- 8 slices of fresh mozzarella
- 4 ripe tomatoes
- 1 garlic clove, whole
- Pinch of salt
- ½ cup of pesto
- 1 onion
- 1 jar of tomato sauce of your choice
Method
- Set the oven to 180°C (356°F).
- In a pan, simmer the sliced onion until golden. Add the Quorn Swedish Style Meatballs and tomato sauce (add spices if desired). Cook for 10-15 minutes.
- Coat the garlic clove with oil and bake in the oven for 15 minutes.
- Slice the bread loaf in half. Spread the mashed baked garlic clove on the bread, then layer with tomato slices, meatballs with sauce, 3-4 slices of mozzarella, and top with pesto.
- Place the assembled subs in the oven and bake for 20 minutes.
- To serve, cut into desired sizes and serve hot as a delicious lunch, brunch, or appetizer.
